The Alchemist: Moose Knuckle clone

The recipe for this clone is available through Brew Your Own.

(5 gallons/19 L, all-grain)
OG = 1.054  FG = 1.013
IBU = 60  SRM = 5  ABV = 5.5%

Here is the ingredient list:

Ingredients
11 lbs. Thomas Fawcett Maris Otter malt
0.25 oz Warrior® hops (60 min.) (14% AA)
0.5 oz Centennial hops (5 min.) (9.5% AA)
0.5 oz Cascade hops (5 min.) (7% AA)
1 oz. Centennial hops (0 min.)
1 oz. Cascade hops (0 min.)
1.5 oz. Centennial hops (dry hop)
1.5 oz. Cascade hops (dry hop)

I plugged everything into BeerSmith and I’m getting only 43.8 IBUs for the bitterness calculation.  Far less than the stated 60.  Am I missing something?

The 0 minute additions are a 30 minute hop stand/whirlpool.  Did you figure any IBU contributions from those?

This is what I get from BeerSmith:

13.4IBU - 0.25 oz Warrior® hops (60 min.) (14% AA)
  3.6IBU - 0.5 oz Centennial hops (5 min.) (9.5% AA)
  2.7IBU - 0.5 oz Cascade hops (5 min.) (7% AA)
13.9IBU - 1 oz. Centennial hops (0 min.)
10.3IBU - 1 oz. Cascade hops (0 min.)

hmmm - seems like the 5 min additions should contribute more w/ the whirlpool

I don’t use Beersmith… does it continue to add calculated IBUs to all of your other additions when you say you’re going to whirlpool?  Your five minute addition is likely calculated assuming it’s five minutes and then chilled, when in reality it’s five minutes, then a thirty minute hopstand.  You’ll continue to extract bitterness from your five minute additions during that time.

So there is a setting in the equipment profile:

“Estimate Boil Hop Util in Whirlpool”

Once I enabled that the estimated IBUs are now: 61.3  :slight_smile:
