Read that last night in the magazine.  Very good read.

Interesting read. Palm-wine can be tapped directly from the trunks of felled trees after they’ve had time to ferment. An easy way for our ancestors to enjoy the benefits of alcohol.

apparently even elephants do this, They will knock over a palm tree, step in the stump to create a depression and go away for a few days, the sap collects in the depression and ferments so when they return… Elephant palm wine!
