Two hops...

Considering ordering a half pound of two types of hops. If you had to pick two to be the most versatile, used, abused, etc. in Pale Ales and IPA’s which would you choose? I would really like to pick Mosiac as one.

Cascade and willamette. Try beers made with mosaic before you commit to a half pound. I like it a lot, others don’t.

Edit. - IPA only, cascade and centennial are my top picks. I use willamette for all sorts I other beers, but not IPA.

I vote for Cascade and more Cascade. Its my favorite hop. But I would go Centennial or Chinook as a good compliment.

Magnum and Cascade.

Amarillo and Columbus for me.  They blend nicely.

These are the two hops I must have in my freezer at all times, but I don’t use magnum in APA or IPA, so I didn’t include it.

I’ve never made a bad beer that had Magnum as a bittering charge. For me, works well in Pale ales and APA’s  including a host of other beers. It was a toss up with Chinook but I think Magnum is a bit more forgiving.

I agree, but I haven’t made an APA or AIPA with a “bittering” charge, and Magnum tastes kind of strange when it is added as a flavor addition (minty/herbaceous).

Here’s a general list of hops that I like in IPA’s and Pale Ales (no particular order):
Amarillo
Citra
Cascade
Simcoe
Galaxy
Crystal
Centennial

If I were forced to choose just two for these two styles:
Cascade
Amarillo

Citra has its place. Its place is mixed in with other hops. I am not too much of a fan all by itself.

Yep. I made an all citra IPA that was meh, mixed it with a cascade smash and it was like the Beatles.

If I could pick only two, then Cascade and Citra.  Seriously, you can’t go wrong with Cascade, it’s super versatile and well loved by virtually all Americans.  Citra, Simcoe, Mosaic… not quite so much.  The others are more in between.  I like Centennial a great deal.  It’s a close third.

You will be hard pressed to get a homebrewer to give you a unified answer on their favorite two hops over the course of a couple months…

everyone else is wrong. Centennial and Columbus for America style. Magnum and Hallertauer Mittlefruh for Germany styles. And whatever you want for Belgium styles. Don’t listen to these knuckleheads.

Magnum and cascade

I am really liking Galena for a bittering charge, clean and smooth. I think, (with a little more experimentation) that this may very well end up as my go-to hop for the bittering addition.

I do like Mosaic a lot, but I have to agree with most everyone here on Cascade. Great hop, very versatile, and can be used in almost every style of beer.

Nelson Sauvin and Apollo. Apollo is the perfect marriage of Columbus and Amarillo to me. Nelson is everything I like about Cascade with a little extra.

After those I’d go with:
Sterling
EKG
Motueka
Caliente
Meridian
Citra
Challenger

If I could only use two fuggles and ekg.

Or cascade and chinook.

But that’s just because  I prefer English styles.
