I brewed a Vanilla Cream Ale, using real vanilla bean. The beans were soaked in vodka during primary and then the beans and vodka were added to secondary. After kegging/carbonation, for the first week or two the flavor was amazing. Then the vanilla flavor dropped out. Anyone ever experience this or know what may have happened?
i recently posted on this and used vanilla beans in my porter. others have said either leave them in longer so you get a little more than you may target in flavor, or add more along the way. seems to be normal regarding loss.
My experience as well. The flavor will fade so either leave in longer before kegging or add a bit in the keg to maintain flavor but don’t go over board. If you add to keg bag them so if it gets too much you can pull them
