I don’t find British mild ale malt all that available, can I use vienna instead? If no, what other malt?
Don’t like Maris Otter or Golden Promise even? If not, maybe a blend of vienna and Maris Otter?
You can probably come up with a close approximation by using American Pale malt and then just include like 2% biscuit malt in the total grist, something like that. Not exact but in the ballpark.
I do, but I like to use mild ale malt as it has a slightly higher SRM and I really liked what I perceive that it adds to the taste.
I’ve used Vienna as a base malt for British beers, and it has worked really well. It may seem inauthentic, but the nutty, toasty flavors it provides are exactly what I expect in those styles.
