If all you want is a few liters for Mardi Gras, you could sanitize and fill up some empty 1- or 2-liter plastic bottles and let the beers condition/carbonate in them. Let the rest of the beer remain in the bucket/carboy and continue to condition “on their own schedule.” Since the plastic bottles won’t explode (even if dropped during your revelry), your risk of a bottle bomb (but not necessarily a gusher) goes way down. Just an idea.
i hope i didn’t screw up… i threw an ounce of simcoe into the carboy today.
i racked this to secondary today to get it off the dry hops. took some gravity readings over the past three days and it looks like it finished at about 1.018. i haven’t done a secondary in a dozen batches. of course i had to taste the uncarbonated beer to make sure it wouldn’t make anyone sick, lol, and it’s going to be well and good.
