what do you think of this recipe / hop profile?

i’m brewing some non-descript beer tomorrow which doesn’t really fall into a category that i can tell.  i have been contemplating throwing in some black patent to make it look more warrior and magnum like.

here is what i’ve got…

3 lbs extra light dry malt
3 lbs amber dry malt
1 lb light dry malt

.5 oz magnum @60
.5 oz warrior @60
1.5 oz magnum @5
.5 oz warrior @5
2 oz centennial @0

safale us-04 (english ale)

og 1.060
ibu 67
abv 6.2%

I’d use light dry extract instead of the amber then add my own specialty grains to get the kind of character I would have from the amber extract.

thanks denny.  that’s really what my plan was going to be, but the homebrew corner only had 3 lbs of extra light and the amber and dark, so i grabbed an amber to go with the pound of light i had leftover from last beer.

I might try some special roast with that recipe. What are you looking for…Black IPA?

i didn’t have a particular style in mind, but i know i have some special roast.  how much would you use?  would some biscuit mixed in be good or bad, you think?

I would go with a half pound each of biscuit and special roast to point you toward a hopped up American Brown Ale.

i ended up using 3/4 lbs special roast and 3/4 lbs biscuit.  plugged it into brew pal and it came up pretty close to an english ipa, just a couple ibu too high.

Which sounds like a great beer anyway!

do you think 9 days in primary with no secondary would be too soon to bottle?  that would be, brewed on the 29th and bottled on the 7th?

You could probably get away with that, but do a gravity reading first starting at day six.

I think you need to let the beer decide on the schedule…

as euge has indicated…check the gravity after 6 or 7 days, then on the 8th and 8th day. If it remains unchanged then I recommend letting the beer sit another couple days to condition and then bottle.

yeah, i’ll take some gravity readings.  always a good idea…  i really need to start getting in a habit of that.  usually, i’m not real rushed, but mardi gras is on the 21st and i wanted to bottle rather than keg so i could just bring a few bottles to the parade.

in the interest of better beer, i probably should just wait and let it do it’s thing and bottle it in two or three weeks.

…not only better beer but avoiding bottle bombs as well.  :slight_smile:

If the gravity was lower I’d be more enthusiastic about bottling sooner. I think you can get away with it though if the gravity stabilizes. I’ve always wondered about the extra 2 weeks on the yeast vs 3 weeks in the bottle and whether it makes a difference. I’m inclined to believe it is small.

i bottled an ipa sunday that was in the carboy only 13 days, but the gravity was the same for three days, thurs-sat.
