Me, I can’t keep up… for the first time since November I am at risk of having to drink commercial beer in my own home… Brewing 10 gallons of house APA tomorrow, then 4 days of UK. The current keg is at a little over 1/4 :o I need to just brew until I have a bunch of kegs in stock…gives 'em more time to settle down too…
At last year’s NHC, there was a mead panel of some excellent mead makers. To a man they said if you follow a staggered nutrient addition schedule (take your total yeast nutrient addition, divide it by 8 - add 1 portion every morning and 1 every night for 4 days) you can have a mead up and drinkable in 3 months, no problem.
They then poured meads to prove the point.
Also, I would transfer at the end of a month anyway to get rid of sediment.
Mashed in on this rainy morning. I hope I don’t have to remain this beer with a situation appropriate name. I’ve had a skunk traipsing around my house for about an hour. He almost made it into the garage a few minutes ago.

I’m just mashed in on a Terrapin Rye Pale Ale clone. I’m using the recipe from BYO with some adjustments. The hop schedule in the recipe must be off…Beersmith had it calculated at 79 IBU, while the recipe said it should be 45. I dialed the hop amounts down to get it in range so I hope it comes out OK.
;D I figured that was it. Ya definitely gotta monitor closely and throttle the gas until the hot break! I like to boil vigorously so even after the break, I don’t whack it open and walk away. Cheers.
Sorry to hear about your back, Denny. Gettin’ old sucks, don’t it? ;) Made that Cascadian dark ale yesterday. Chilled it in the snow, (couldn’t get to an outside faucet). Thinking the Brewmaster 3000 needs to get started again. Getting too old to hump around 15 gallon kettles.
