Does anyone know the brewery origins of this yeast? Apparently Wyeast’s Biere de Garde yeast (#3725) is from the Fontome brewery (which is interesting since that is a Belgian Saison brewery).
Also, does anyone have experience with both yeasts? If so, which one would you recommend for a Biere de Garde?
My experience has been if you pitch both a smack pack of WY1007 and a tube of WLP072 into a biere de garde, the WLP072 yeasts will surrender to the WY1007 yeasts.
I don’t have experience with both, only the WLP072, which I liked.
Based on the description of WY3725, it sounds like it will have more phenol character than WLP072. So it may come down to whether you want a little spice to it or not.
I’ve also used WY1762 in a biere de garde and really liked it, maybe more than the French Ale yeast.
All I know id that French Ale is a monster! A guy in my homebrew club brewed with it last year and he said it was the most vigorous fermentation he’s ever seen.
