That was in the White Labs newsletter at the NHC.  There it is called a California Ale Yeast on steroids.  “Strong fermenter that can be done in 3 days.”

Might have to try it someday.

Saw this at NHC as well. Definitely going to have to try it out

What online brewing stores are selling this?  I would love to get this in South Korea!!!

What are the odds that this is a local propietary strain, i.e. Stone?

Stone is, or is very close to WLP007 (and certainly nowhere near WLP001, which this is supposed to be very close to). Some are saying it’s Port, but I dunno if I buy that.

Doesn’t Stone ferment their brews at 73f?

Wouldn’t surprise me. Stone also has 360 bbl fermenters and can get away with things like that.

Fermentation temps are base on the size and shape of the fermermenter.  Commercial breweries can ferment warmer than homebrewers because of pressure on the yeast in the cone surpressing esters and fusels.  Not sure if it is Stone’s yeast or not, just a theory.  I know White Labs propagates Stone’s yeast.  Could be another local yeast, Port, Alesmith, etc. Ballast Point may be the logical option since that is how Chris White got started, now that I think about it.

I dunno, it seems to me that the characteristics of this yeast are closer to an English strain of yeast than Chico.  Especially with the flocculation being medium to high.  That is why I was thinking Stone because WLP007 is like WLP001 and WLP002 had a child on Ritalin.  It generally attenuates out to 80% in 3 days, ferments in the high 60’s, and flocs out like a brick in the fermenter, which it sounds like WLP090 does as well.

Stone told me that they basically started off with WLP002 and to use that if I want to replicate their brews… I haven’t used 007, so I can’t say for sure… but they’ve been pretty good about giving up recipe info aside from AB…

Nope, it was actually my feeble attempt to bash Arrogant Bastard, which I think is absolutely vile and disgusting, and easily the worst beer they make.

I had AB at the brewery during NHC week and I was astonished to find out that I really liked it.  Prior to this, I had always hated it which makes me think that there packaging is wanting and causes lots of oxidation once it is shipped in the big bomber bottles.

AB is my all-time favorite beer and I look forward to having it fresh at the brewery next week.  Only had it in the bombers, can’t wait to have it on draft!

As a native San Diegan, I’ve had it at the brewery several times, and while I’ll admit that it’s better, I still don’t like it. Taste like they just steeped a bunch of C120 and boiled it with Chinook.  ::slight_smile:
