WLP800 low FG

I have a CAP that I’m making with WLP800 Pilsner Lager.
The malt bill is 5 lbs - 6 row, 2 lbs Pilsner malt and 2 lbs flaked corn.
I did a 1/2 hr protein rest at 122 and a 75 minute mash at 148 so I know it should be fairly fermentable and I was shooting for a dry character.  OG was 1.053
I brewed it on Feb 21 and I checked the gravity two weeks later and it was at 1.030 but it had been very cold and I have no temp control beyond opening the cold room door to let more heat in but the fermentation temp was probably 40 - 50 degrees over this time.

Now, it’s warmed up considerably and I checked the gravity again yesterday.  1.002???
Does this make any sense?  Can it be that low or do I have some sort of contamination eating up my sugars?  I tasted it and it tasted fine so I don’t know what’s going on. 
The temp was probably 65 degrees (not 60) but even then I can’t see it making that much difference.  Maybe 0.002 increase.

Hmm, I have a Bopils about done fermenting now. I will check the gravity on it. I did a smiliar mash schedule as you did with your CAP but added a 157 rest and decoction. 100% base malt, so it should be very fermentable. I will check gravity on it tonight and see where I’m at with it. I have side by side of WLP800 and WY2001 so I will see if theres a difference between the 2 also and report back.

Have you done all the usual checks like calibrating your hydrometer? Does the beer taste very dry? I suppose theer could be some stratification going on and your sample picked up one with more alcohol in it. I would just try another sample to see how that comes out.

I’d say that between a high proportion of adjuncts, a low mash temperature, and a lager yeast, that’s a reasonable FG.

I took a F.G. reading on my Bopils from a couple weeks ago. It was a 10 gallon batch split between WLP800 and WY2001. Both pitched at 44, fermented at 48, for 17 days, diacetyl rest for 5 days at 65, crash chilled and kegged this morning.

The OG was 1.051

FG on WY2001-1.007
FG on WLP800-1.006

Very similar results surprisingly considering they had very different fermentations from a visual perspective. WY2001 was much cleaner looking whereas 800 took off quicker and made a bit of a mess of things.
