Wyeast 3864 - Canadian/Belgian Ale

Is it just me or is this the greatest yeast strain of all time?  I hope they release it again soon; it’s been forever…

Unibroue!!!  One of my favorite breweries!  They haven’t made a beer I don’t like…  I am anxiously awaiting the release of this yeast also…  If I remember correctly, it is due for an October release…

I bought a pack of this yeast a while ago and it’s sitting in the bottom of my fridge awating some starter wort and a recipe.  What would you make with this?

To date, one of my favorite beers was the Belgian IPA I made with 3864.

Yeast: Wyeast 3864-Canadian/Belgian Style

Mash at 149 degF for 60 mins
OG: 1.063
FG: 1.012

I got an email from Wyeast stating an Oct release.

Anything that you want plum and cinnamon flavors with.

I may have to try that. I have made Belg IPAs in the past with 3522 and maybe it’s time to switch it up.

I may have to give that a think…something to make with the IPA yeast cake. Dubbel? Saison?

I have yet to brew with this strain, but I love me some Unibroue something fierce. I’ve been toying with a Belgian Barleywine recipe that I’d love to make with this yeast. I don’t know if I can wait till October, though. I may have to brew my first batch soon with WLP540 and then brew it again in the fall when I can get the 3864.

Made a very nice Belgian Pale with this yeast last year…

Just an FYI, I ordered this from my LHBS.  It seems to be available now if anyone is looking for it.

I should get some.  I cultured some up and it made a tasty tripel.

I could do a side-by-side comparison, which would be nice.  10 gallons of tripel.

To me, every Unibroue tastes the same, and its because of this yeast.  If you like it, then go for it.  Personally I’m giving this one a wide berth.

I do tend to pick up more diacetyl than I like in a few of Unibroue’s beers. Does the Wyeast strain throw a lot of diacetyl?

I haven’t noted any diacetyl in anything I’ve brewed with either 3864 or cultured Unibroue dregs.

I don’t think the Unibroue that’s distributed in the States is refrigerated. That could certainly be a factor.

I’ve never noticed diacetyl either.  I only have Unibroue beers when I’m in Quebec and I suspect that they are a lot fresher than they’d be in the US.

I’m gonna try to do a blanche de chambly clone attempt (or blonde de chambly cause I think the wit actually uses a different yeast) and then make a run at a Grande Reserve 17 clone (no recipe but it’ll be a Belgian Dark Strong as a start).

Fantastic news. I emailed them over the summer and they didn’t have a release date for it yet. I ended up building up a pitch off an old bottle of mine for a few brews this fall, but I think I’ll take this opportunity to freshen up my stock.

My spring brewing schedule just got a bit more interesting. Looks like I will be replacing my ESB > Barleywine with a BSB (Belgian ESB) > Quad IPA.
