I’m going to be brewing a bunch of lagers in the next several weeks. I am going to be ordering a few pounds from Hopsdirect.com, and I want to get a versatile hop for use in everything from Helles to Dopplebock. What do you guys think?
But, hopsdirect does have US Hallertau, US Tettnang and GR Hersbrucker and GR Tradition available.
I’ve not used the US Hall before, but have used all the rest - they are great hops - I might even like the US Tett better than GR Tett simple from a freshness perspective…
The US Tett are good, they have a nice spiciness to them. I didn’t care for the US Hallertau from last year though, they were a bit too grassy, OK in the boil, but not for aroma.
I used Saphir in a Full Sail Amber clone(byo) in place of hallertau , really liked the aroma.
Saphir (GR) Pellet Hops

This hop has a low alpha acid content and is very well suited as an aroma hop for the finest European style lagers.A true jewel of the noble hop family with a refined aroma & a mild flavor. Sweet & clean citrus aroma that has a hint of tangerine
If we’re talking US cultivars then I’d recommend Crytsal or Ultra, but Mt. Hood does have a huge brewery following for this purpose. I’m also a fan of Liberty, but it can sometimes be too spicy for late additions.
