Favorite hop pairing?

What’s your favorite hop pairing for lagers and/or ales?

For APAs I really like Citra+Mosaic and Ekuanot +Mosaic.

I usually only use one hop for lagers.

For lagers I like Sterling + Motueka. They both taste like their Saaz lineage, but get some citrus when used late and in larger amounts.

For English ales, I like Challenger + EKG, and sometimes I’ll splash in some Centennial, Motueka or Caliente if I want some extra late hop character in a bitter.

For Pale Ales and IPAs, there are literally no bounds. Some of my favorites are Vic Secret + Nelson Sauvin, Simcoe + Amarillo (that’s an old school fave I need to get back to soon), Nelson + Meridian + Motueka, and then you can add Citra and/or Galaxy to any of these to boost the oil content.

Hallertau blanc and mandarina bavaria. Very good in lagers and mild hoppy beers.

'Pale ale and IPA’s, I’m old school, Chinook, cascade, centennial as well.
