sorry, should have been more clear, guess I was asking which non german hops folks like in a german pils. I am making a resolution to only brew with domestic hops in 2021 asnd I make quite a few german pils.
I like Mandarina Bavaria. I use it in a few of my lagers! You will get nice tangerine notes from it. I have used it as a dry hop too with favorable results.
It doesn’t quite quite come off as a traditional German Pils, but I love Motueka in this style. You can taste its Saaz lineage, but it has a great lime zest character that is really nice in a crisp lager. I brew one of these just about every year in the early spring.
I have used Sterling, Santiam, Crystal, Vanguard. I liked Santiam a lot, but it’s super super floral. I’ve heard good things about Liberty as well, but I haven’t tried it.
Galena and Liberty make a fine pils-type beer. Galena and Mt. Hood also works well. Back when I was using those hops in regular rotation, I would often blend Liberty with Mt. Hood for the finishing additions. It helped that I was getting my hops from Mark Garetz during that period and Mark had his hops analyzed for oil content, which made finishing additions much more consistent. I do not know why the big hop brokers do not list oil content on their hops. Alpha acids are useful for bittering additions, but they do not tell one much when it comes to finishing additions.
