Subject says it all. I am looking for something that will work well in a pale ale. I will say that I am looking for something more on the citrus side versus a lot of the newer super fruity hops. I seem to be going back to the old reliables; centennial, amarillo, etc.
Columbus/Cascade is a wonderful pair (1/3 to 2/3, respectively). But I’m not sure if you’re looking for “old standby” combination or looking to utilize some newer, non-juicy (thinking of Denny here) combinations, or if everything is fair game.
I am looking to avoid hops like El Dorado and even Mosaic to a certain extent. I like Mosaic when it is not the primary hop. Plus, everything hoppy that I come across lately seems to have Mosaic in it…
Mandarina Bavaria. Had an IPA in Germany that was bitte red with Herkules, then Cascade and MB in the kettle later, dry hopped with MB, Cascade, and a little Simcoe.
I really like Aurora and Cascade together in a pale ale or hoppy lager. Aurora is a Styrian variant. It has a mixed citrus flavor with a touch of tropical fruit. However, unlike newer hop varieties it isn’t a fruit bomb. It has some floral notes but the fruit is primarily offset by herbal and pine notes. You could easily balance the fruit with some Mount Hood.
I don’t think it’s much like Northern Brewer. I feel like that is people looking at the lineage of a hop and saying that’s what it tastes like. It is a little forest-y but I think that’s true of all styrian variants and a little true of saaz. It’s definitely not the woodsy and minty northern brewer flavor.
