interesting hop to pair with cascade

Subject says it all. I am looking for something that will work well in a pale ale. I will say that I am looking for something more on the citrus side versus a lot of the newer super fruity hops. I seem to be going back to the old reliables; centennial, amarillo, etc.

Aside from the obvious Centennial or Amarillo, Lemon Drop or Ahtanum would fit the bill and work nicely. I agree, the old standbys are still great!

I like using cascade in continental styles (Belgian/English) paired with a continental aroma/flavor hop.

Belgian beers get cascade/Saaz

British beers get cascade/EKG

I made a citra cascade pale ale and its my favorite pale ale ive made.  I used twice as many cascade hops as citra.

I do have a couple of oz of Ahtanum that I have yet to try. Equal amounts of cascade and ahtanum?

My most recent pale ale is cascade/sterling. The verdict is still out on this one…

Yep, they’re about the same intensity. You’ll like it!

Galaxy

lemon drop.  the name says it all, stays away from the mango bomb that seems to be pretty easy to fall into.

Nelson sauvin. Adds a bit of dankness as well.

Columbus/Cascade is a wonderful pair (1/3 to 2/3, respectively). But I’m not sure if you’re looking for “old standby” combination or looking to utilize some newer, non-juicy (thinking of Denny here) combinations, or if everything is fair game.

I am looking to avoid hops like El Dorado and even Mosaic to a certain extent. I like Mosaic when it is not the primary hop. Plus, everything hoppy that I come across lately seems to have Mosaic in it…

Willamette. It has some floral and citrus.

Mandarina Bavaria. Had an IPA in Germany that was bitte red with Herkules, then Cascade and MB in the kettle later, dry hopped with MB, Cascade, and a little Simcoe.

I like to pair Cascade with Cluster (the other “C” hop).

Cascade goes well with all sorts of hops. I go through a pound a year minimum. Being a commodity hops makes it cheap and easy to get ahold of.

I really like Aurora and Cascade together in a pale ale or hoppy lager. Aurora is a Styrian variant. It has a mixed citrus flavor with a touch of tropical fruit. However, unlike newer hop varieties it isn’t a fruit bomb. It has some floral notes but the fruit is primarily offset by herbal and pine notes. You could easily balance the fruit with some Mount Hood.

Sounds great! Some descriptors I have found just seem to compare it it Northern Brewer so it is good to actually hear from someone who has used it.

I don’t think it’s much like Northern Brewer. I feel like that is people looking at the lineage of a hop and saying that’s what it tastes like. It is a little forest-y but I think that’s true of all styrian variants and a little true of saaz. It’s definitely not the woodsy and minty northern brewer flavor.
