Palisade Hops - nope, actually they're Calypso

A year ago I won a lb of these and they’ve been in the freezer, still vacuum packed ever since.  I guess I best break them out and give them a try.
Anyone used these?  What character could I expect if you have used them?  I am going to do an APA with only 2-row, crystal and Palisade hops just to get a feel for the flavour.  Given that no one ever talks about them, I’m assuming that they aren’t a favourite.  I know that there are profiles on line but how accurate are they (I never see Cat-Pee or Vomit or Feet on these as descriptors but I read it here a lot)?

i read that they were like a high AA tettnager hop, so i used mine for bittering in an coffee porter (high abv) and i think it turned out real well.  i thought it had a nice noble hop characteristic to it.

I haven’t tried them myself, but from what I’ve heard they’re mainly floral with some grassiness and (non-citrus) fruit. I’ve heard that they mix well with Amarillo, and work well in British Pale Ales. I say try them in a Pale Ale and let us know what you find :slight_smile:

A great description - I thought it was very noble-esque with some citrusy character as well.

Our LHBS says on the website:

“Palisade This is a New variety with aroma of Fuggle and Willamette and can be used for both bittering and flavoring. Alpha acid 7.5 to 9.9% will leave your brew with a soft and clean finish. Ideal for IPA’s and other strong hop styles.”

No wonder I hated them!

I haven’t used them in a single hop beer.  I have used a touch late in some pale belgians or in a dry hop blend with typical PNW hops, but not enough to seperate their characteristics.  I have seen that some of the pro brewers are starting to experiment with them and like the flavors and aroma they provide when used late or in a dry hop.

I have heard using too much of them does give some funky off flavors.

For an APA, maybe
FWH for 20-25 IBUs
1-2oz at flameout
1-2oz dry hop

That’s funny… I have pretty much that exact beer on the schedule for next month. I just got a bunch of 1 gallon jugs so I’m going to do a series of mini batches for all the hops I have that I’m not too familiar with. Calypso is on the list. I’m working on a couple of hop blends so I’m thinking this may work in my fruit bomb blend.

I used them as a single hop (sparingly) in a Saison. I thought they worked rather well. I’ll do it again.

Ended up doing an IPA with Galaxy and Calypso blended.  I found them to have very little aroma when I opened the package.  1 oz of each at 15, 5 and 0.  Probably won’t dry hop it.  If I like it, maybe a single hop next time.  Just don’t want to do 5 gals with no idea what to expect.

I just used Calypso as one of the 7 batches of single-hopped APA’s I brewed yesterday. Had a real distinct aroma that was unlike any of the other hops I used. It was definitely fruity, but had an herbal/earthy quality to it as well as a bit of an aroma that reminded me of fresh-picked tomatoes. I’m very curious to see how this one will turn out.

Decided to dry hop 5 gals with1 oz more of each. Or maybe 1 oz of one in one carboy, 1 oz of the other in the other.
