80% Pilsner, 10% Munich light and 10% Munich dark. Nugget to bitter and Tettnanger late in the boil. I call it .. wait for it .. “Pale Lager”. ![]()
Steve’s Cali-Belgique IPA Homage…this was an attempt to clone the signature recipe of a good friend and brewing buddy. For those who remember it, Stone had a beer called Cali-Belgique, which was basically their Stone IPA fermented with Belgian yeast. Steve perfected his own version…he passed recently, and so this batch was in honor of him. I got pretty close to my best memories of his version! Details and more at the blog.
Brewed a Dark Mexican Lager with roasted Anaheim and Habanero peppers. 5.6% ABV with just a hint of heat at the end.

I made this to share at my block party, so I didn’t want it too be too hot for a lot of people. I made two 6 gallon batches and did 2.5 roasted Anaheim peppers at 5 minutes and 2 Habanero peppers at flameout for each batch. Both batches were fermented together in my Unitank.
Just tapped my all El Dorado session pale ale. Still a bit cloudy though it has only been conditioning for a week. Serving using my swan neck with no sparkler.
Next beer I brew will probably be an El Dorado Mosaic mix
I was cleaning out a bunch of stuff to get my brewing life in order and found something I had completely forgotten about – a keg of lambic! It was aging in a carboy and not at all ready to drink when I was about to move 8 years ago, so I threw it in a keg and forgot.. It’s quite nice now, and I’m aging a gallon on some sour cherries from my trees (Juliet and Balaton).
American Wheat Beer
50% Red Wheat, 25% Pilsner, 25% Vienna, 25 IBU of Cascade at 60, 1051 OG. BRY-97.
Tasty and refreshing.
I conditioned the beer naturally in 1 gallon kegs. That made it easy to take to parties and to swirl yeast into suspension when serving.
Meanwhile when the forum went down I kegged and served this all El Dorado beer.
It’s pretty much empty might have one glass or two left

I’m in Kent right now and have been trying lots of cask ales. A few of them have been pale ales with American hops. Those beers must be similar to yours.
