Has anyone tried adding truffles to beer? Wife brought a jar back from Italy and I wonder if it’s enough to try in a small batch or just a horrible idea. Probably almost a quart but she wouldn’t let me have them all so a really small part of a batch?
I’ve used chanterelles, matsutakes and portabellas, but not truffles. Frankly, dude, they’re truffles…don’t put them in beer. Or maybe cut one up and steep it in a container (maybe PET bottle?) of beer for a while. I’d bet you get lots of flavor and aroma while using minimal truffle.
I would drink it and probably love it, if used with great restraint. A gram in 5 gallons is probably enough.
Not to tamp down the whole Truffle in beer thing, but I can think of a whole bunch of other ways to use truffles besides in a beer. IMHO, that does not sound pleasing at all. Sorry

I think that with the right beer style and a restrained truffle addition this has a 30% chance of being heavenly. I think it has a 70% chance of ruining a batch of beer and wasting truffles.
Thinking of what this would play nicely with. Maybe a rauchbier or smoked porter. I also could see it in an aged barley wine but I am sure you would want to know sooner how it works.
I think with a very light touch it could work in a Scottish ale.
The smoked porter sounds like good candidate. Maybe split a batch in half so it’s not all ruined in case it doesn’t work.
Has potential, good luck. Remember to be as subtle with the smoked malt as you are with the truffles.
