I bottled my Black Forest Stout (JZ recipe sans cherry puree and sub’d Just Black Cherry juice) a few weeks ago and promised y’all an update:
I sampled it the other day. The cocoa is there (not huge with either flavor or aroma), and the cherry–just barely. If it is served too cold–it just tastes like a cold stout. It must warm up considerably to even get a hint of the cocoa or black cherry.
I wish there was some way to doctor the beer and put more cherry flavor in it (but I’ve already bottled 5 gallons of it and kegged the other 5 gallons). I’m open to ideas from anyone. Shall I do the “Mit Schuss” Berliner Weisse thing with my stout and put some marischino cherry syrup in the glass first? it’s supposed to be a “chick” beer for my wife and all her chocaholic girlfriends.
no brewing plans, just bottling an irish red and an oktoberfest that’s been lagering for about 8 weeks. I think I might add the cherries to my lambic as well to officially turn it into a kriek
Bummer… I’ve got 2 13 year cats and an 11 year old dog that I’m starting to worry about and then I’ve got a 5 year old dog with a propensity to eat everything, so…
Thanks, guys. Our great vet is coming out for a house call in a couple hours, and we’ll say goodbye to our lovely Border Collie, Mabel. 15 1/2 years old, and the happiest, most loving dog I’ve ever known.
