I bottled this today. From the sample I took from the fermenter I must say I hit this one right on the head. I could definitely taste the citra hops but they were not overpowering by any means. They simply had a “presence”. I can’t wait to try a bottle of this next week.

Congratz Gymrat. It must feel really good to know your process is down the way you want it to be able to hit a recipe on the head. I hope it comes out wonderful. I am brewing a 6 row/6 adjunct cream ale right now. (crosses fingers).

I make one very similar but I add 1 oz of citra at 15 mins and 1/2 oz of either citra or amarillo at 5 mins and that’s all.  I skip the 60 min addition and get a real nice bitterness with abundant hop flavour and aroma. Just something to consider although if yours is working for you, don’t change it.  I just like the late hopped character in a wheat beer for some reason.

Thanks. I tried a bottle of this stuff last night. I am absolutely amazed at how much hop character I got from just 1 ounce. Those citras must be some potent hops. My beer is absolutely delicious.

I had 8 guys over after work Friday. The beer that was the most popular was my White Wheat Wonder so I am making more today. I am changing 2 things. Instead of 6lbs 2 row and 3lbs white wheat, I am doing 5lbs 2 row and 4lbs white wheat. The other is instead of S 05 I am trying out the new BRY 97.
