wyeast 1084 Irish ale

anyone have experience with this strain?

I’ve been refining a wheat based porter and usually use 1056 and have been quite happy with the results. But experimenting is great fun.

I’m brewing another batch of the porter this weekend and figured I’d give this a try and see what happens. Wyeast says it’s good for dark worts, which mine obviously will be.

This is the only strain I use for my stouts.  I love it.

I’ve never thrown wheat at it, but I’ve done just about everything else.

I don’t perceive a particularly dry finish to it, but I may have to crack open a bottle of stout tonight to double check.

I gave up on it years back.  I found it threw diacetyl and sometimes a weird tasting pineapple ester.

how about thoughts on 1272?

I love it for my moderately hopped house APA.  It’s not as clean as the 1056 so it adds a bit more character to a brew that isn’t so hop centric.

I’ve never had a problem with any of my fermentations using the 1272 but I’ve only used it in the APA to date.

I like it a lot.

FWIW, my favorite porter strain is Ringwood. Irish ale yeast is good, too…just ferment it cool.

You are a sick, sick man…
