gotta check my stores of various dark malts, but hopefully a schwarzbier. if I’m out of something, I’ll delay a week or so and do a Munich helles.
if I’ve got a free fridge still on Sunday, I’m sure I’ll experiferment with another cider or two. Been doing quite well with these lately.

gonna do a barley wine, the belated 2nd annual Sweet William to celebrate my sons birth.
Schwarzbier must be on our minds as that is what will hit the brewing equipment this Friday for me. Getting ready to put together my yeast starter shortly, check the equipment and be all set. Hope everyone has a relaxing and enjorable Thanksgiving! This will be our first Thanksgiving without either of our sons as both are in the Navy now. Empty nesters! More time to brew!
Kegged an RIS this morning that’s going to end up in our club barrel. Brewing up a split batch of saison tomorrow morning to compare WL Saison strains.
Just brewed a nice hoppy pale ale yesterday. Will be doing a Strong Scotch Ale on Friday, and an ESB either Friday or Sunday. Will try to squeeze a Bock in there but it will likely have to wait until next weekend. Gotta get the kegerator refilled after my wedding!!
I might try a Christmas Ale Clone recipe from Great Lakes. My wife and friends really like it and I just want to see how close I can get to the real thing.
Brewed an American brown today. Pitched on a cake from a pale ale brewed on Learn to Homebrew Day. Probably brew a dark mild or maybe SMaSH bitter this weekend. Happy Turkey Day!
Gonna bottle another batch of my DIPA, and will be brewing a Belgian golden strong. I’ve brewed to gs numerous times, but I’m trying a slightly altered recipe, to get it more “to style.”

An Old Ale or a Scotch Ale. Depends on which yeast is ready to go.
Just finished brewing a Belgian Imperial IPA. I used Zythos and Citra hops for a calculated IBU of 118 and an anticipated ABV of 8.4.
The turkey is sitting in a brine right now, and going on the smoker tonight at 1:30 AM.

We’re brewing up our annual Black IPA on Black Friday! Happy Holiday’s all.
Our club is doing a “same brew” recipe where we all start with the same recipe and change it up how we want. I am taking the ESB and adding 1lb of home toasted oats for some mouthfeel.
I will be making an English Barleywine on Saturday, using the Yorkshire yeast from my recent Special Bitter.
Brewing 10 gallons of an all Cs APA (Columbus, Cascade, Centennial, and Amarillo).
I’ve been curious how that will do in a barleywine. You’ll have to report back.
I have a porter to bottle sometime this weekend.
